Grand Admiral and El Capitan are put into French barrels for aging

This week, four red vintage varieties of 2019 – Cabernet Sauvignon, Saperavi, Merlot and Pinot Noir – were put into barrels for aging. To maintain the premium brand 46 Parallel, we use new barrels made of French oak: Eclat, Eclat Fuzion and Eclat Hydro, with a volume of 500 and 225 liters made by Vinea, a famous French manufacturer.

The recently put into barrels – Cabernet Sauvignon, Saperavi and Merlot dry wines – belong to the Grand Admiral premium wines collection. Aging in oak barrels for these varieties will last at least 18 months – a more accurate aging period will depend on the organoleptic properties that the wine will acquire during this process.

Pinot Noir vintage 2019 – a wine from the line of El Capitan light premium wines. The decision regarding its aging period will be made by Evhenia Pustovit, Chief Winemaker of 46 Parallel Wine Group, giving due consideration to how the wine will be revealing its best properties during the process of aging. The approximate aging period is from 3 to 6 months.

Aging in oak barrels is an important stage in the production of premium wines, during which the wines are developing more complex secondary flavors, tannins are softening, acidity is reducing; thus, wine becomes more complex and more exquisite, without losing its original properties. Aging in new French barrels will add the fascinating tones – vanilla, caramel, chocolate and spices – to the wine flavors.
